Linguine Murtabak
Serves 10. Pan fried mixture of egg, curry paste, vegetable and linguine pasta This popular hawker street food from the Indian Muslim tradition is great to share with family and friends for parties and special gatherings.

  • 150 gr San Remo linguine
  • Cooking oil
  • 1 cm piece of cinnamon stick
  • 5 shallots, sliced thinly
  • 3 garlic cloves, chopped finely
  • 2 cm piece ginger root, chopped finely
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 stalk coriander leaf, finely chopped
  • 1 tbsp chili powder
  • Salt to taste
  • 5 eggs, beaten
  • 2 large red onions, peeled and sliced thinly
  • 3 green chillies, deseeded and chopped
  • Ghee
 
  • Cook the San Remo linguine according to pack instructions, drain and set aside.
